The account that carries the entry happened at closing time, with three people in the building: a manager and two crew.

One of the crew was washing dishes. Somebody he took for a colleague walked behind him and went into the walk in freezer.

So he followed them in.

A walk in freezer is the one part of a restaurant that can be checked instantly and completely. It is a small sealed box with a single door, and there is nowhere in it to be that is not immediately visible.
